Vegetarian Corn Dog Soup

This recipe is adapted from one I got from my client’s dad that called for ham and heavy whip (how treyf can you get?) We loved it with half & half and tofu dogs. It is SO easy it is hard to believe it is this good.

JL’s response: “If I have kids I will make this for them.”

PJ said: “I could eat this all night.”

KN said “I don’t like that.” Then he tasted it and changed his mind.

Vegetarian Corn Dog Soup

6-8 Russet potatoes cubed

2 large stalks celery minced

1 tablespoon vegetarian chicken soup mix

2 cans creamed corn

1 can whole corn

4 Tofu dogs, sliced

1-2 drops liquid smoke (optional)

1 pint half & half, not too cold

Boil the potatoes and celery until done. Drain off most of the water and add the chicken soup mix. Turn off the heat. Add corn and mix well, then add tofu dogs and liquid smoke. Add room temp (or slightly cooler) half & half and you have soup! Perfect with corn bread.
